Dandelion Honey - Give it a try?

The humble Dandelion….. They are everywhere at the moment!! They give me

such joy, and I so love this time of year where the verges, grasses, meadows are

full of them!  Did you know you can eat and make medicine and dye for colouring with the whole plant - leaf, flower, stem, seed and root!! They help the body to shift stagnancy, to

get rid of waste and they help improve liver function and increase all those lovely

stomach enzymes.

During lockdown, my girls and I used some of our daily walks and had a go at making Danelion honey.  It was so much fun to make it and it tasted delicious too!! Why don’t you have a good this season….

1. Collect some dandelions, pick the petals from the flowers.

2. Place the petals in a pan of water ( a cup of water for every cup of petals). Add some lemon slices and boil for 30 minutes.

3.Take of the heat and leave to stew for 6 hours.

4.Drain the liquid and bring to boil and slower simmer while adding sugar (half a cup for every cup of petals).

5. Once it starts to thicken, decant into a jar.
